Day Eighty-Five - Moroccan Rubbed Chicken (4.28.14)


Ingredients
  • 4 small chicken legs (4 thighs, 4 drumsticks)
  • 1 1/2 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground ginger
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 1/4 tsp ground cinnamon
Instructions
  1. Heat oven to 425 degrees.
  2. In a small bowl, combine paprika, cumin, ginger, salt, pepper, and ground cinnamon.
  3. Place the chicken on a large rimmed baking sheet and rub with moroccan mixture. Roast until the chicken is golden brown and cooked through, 30 to 35 minutes.
We enjoyed a simple side of fresh green beans tossed in an olive oil, red pepper, lime juice, and grated lime rind mixture.

Opinions

Katie: I really enjoyed this chicken tonight. The rub was delicious and it turned out as appealing looking as the photo for the recipe which is always a plus!
 
Potter: This was awesome and one of the few times I've had my end product look like the picture I see in the recipe. It turned out delicious and was super easy to mix up the rub and prep the chicken. It was 5 minutes of prep time and leave it in the oven. This is a perfect chicken dish for a busy evening or when you're working on other things around the house.
